‘Tempering’ refers to the considered temperatures meat is stored at in order to perfect the taste during the cooking process; a technique used in temper’s inhouse butcheries before it’s barbequed to perfection in their huge fire pits. Yep, folks - the art of meat eating is taken very seriously at Neil Rankin’s three smoky London restaurants. And whether it’s the quality of the ingredients - they source their meat directly from small farms with high welfare practices - or the expert way it’s prepared and cooked, each steak, lamb chop, curry beef skewer, goat carnita and every other wonderfully thought-out dish that arrives at your table will be amongst the most sumptuous and mouth-wateringly delicious you’ve ever tasted.
It would be easy for this barbecue concept to acquire a carnivores-only exclusivity, but temper applies the same standards of ethical sourcing, cooking expertise and creative execution to everything on its menu, from fish and vegetables to cocktails and wine - and, at the Covent Garden restaurant, the UK’s only Detroit style deep dish pizza.
